Cheddar Ham & Mushroom Quiche


  • 1 single pastry crust
  • 4 eggs
  • 1/4 cup diced fresh mushrooms
  • 1/2 cup diced ham
  • 1 1/2 cup heavy cream or milk
  • 1/4 cup sliced green onions
  • 1 1/2 cup fresh grated 4 year aged cheddar
  • 1/4 teaspoon salt
  • 1 tablespoon flour (all purpose)
  • 1/8 teaspoon black pepper
  • Dash of ground nutmeg

Prepare and roll out pastry for single layer pie according to package instructions. Crimp edges as desired. Bake at 450 degrees for 4-5 minutes. Reduce oven to 325 degrees. In a medium bowl, stir together eggs, heavy cream, green onions, salt, pepper, ham, mushrooms, and nutmeg. In a small bowl mix cheese and flour, add to egg mixture, and mix well. Add mixture to pastry shell, and bake for 40-45 minutes, or until knife comes out clean. Let stand for 10 minutes before serving.
